Fruit pizza reminds me of going to a baby or bridal shower. It is one of those desserts that are not only beautiful, but absolutely delicious! It is also one of those desserts that we justify ‘Well, it has fruit on it so it is healthy right?’ Ha ha. I wish it worked that way! A fruit pizza crust is typically made with a sugar cookie of some sort and then slathered in frosting. I’ve made my share of fruit pizza and it definitely isn’t a fast thing to make if you make your own sugar cookie dough.
I thought it would be a fun snack to make for my kids, but I never like to spend more than 10 minutes making a snack for my kids. Plus, they don’t really have the patience to wait more than 10 minutes for a snack. I came up with this version that is a no-bake, quick and healthy snack. And I guarantee it won’t just be for the kids!
First step is to cut out your crust. I used a plain tortilla and the ring of a mason jar. You could use a whole wheat tortilla, or really any kind of tortilla that you prefer. (corn might taste a little weird)
Next mix up your ‘frosting’. To make this combine:
-Plain Greek yogurt
-Sweetener of your choice to taste (I used honey)
-Drop of vanilla
-Fresh squeezed orange or lime juice
Spread on your mini pizzas.
Then decorate with your favorite seasonal fruit combinations. This is the part where your kids can really get involved and personal their pizza!
A super easy snack that you can literally whip up in 10 minutes. Plus, most of these ingredients I usually have on hand.
