Here’s one of my favorites:

Tofu Mayonnaise

8 oz. tofu

3 tbsp. lemon juice

8 tsp. oil

1/2 tsp. salt

___________________________

Combine all ingredients in a blender and mix until smooth. Store in the refrigerator.
